
Plumcake (pastel de calabaza)
Este mes es la fiesta de Halloween, exactamente el 31 de octubre, y como buenas brujas celebraremos este día, con una de mis recetas favoritas, pastel de calabaza. Disfrutar de esta receta. Para aquellos/as que no consumís ciertos alimentos os indicare por cuales podéis sustituirlos. Truco o trato?
RECETA
( las pipas de calabaza son una gran fuente de magnesio, hierro y zinc)

Ingredientes:
400gr de calabaza
1 yogurt natural (yogurt de soja o eliminar)
2 huevos
90gr de mantequilla (margarina de maíz)
180gr de harina (integral o para celiacos)
120gr de azúcar (estevia o miel)
2 cucharadas de levadura (en caso de celiaco no hace falta ya que sus harinas suelen incorporar la suya o podéis encontrar levadura para celiacos)
½ cuch.canela en polvo
3 cucharadas de pipas de calabaza tostada.

RECIPE
( pumpkin seeds are a great source of magnesium, iron and zinc)

Ingredients:
400gr pumpkin
1 natural yogurt (soy yogurt or eliminate)
2 eggs
90gr of butter (corn margarine)
180gr of flour (whole wheat flour or flour for celiacs)
120gr sugar (stevia or honey)
2 tablespoons of yeast (in case of celiac it is not necessary since their flours usually incorporate their own or you can find yeast for celiacs)
½ tbsp.cinnamon powder
3 tablespoons roasted pumpkin seeds.
Cut the pumpkin pulp into cubes and cook them in a saucepan with 4 tablespoons of water, 15 minutes, mash them with a fork to obtain a puree.
In a bowl mix the butter with the sugar. Add the egg whites, egg yolks, pumpkin and yogurt, flour, cinnamon and baking powder. Mix well.
Butter a cake pan, sprinkle with flour and pour the mixture. Decorate the surface with seeds and bake in a preheated oven at 180º for 40 minutes. Let it cool before unmolding. Serve cold.
